Sesame Snap Peas and Peppers

Ingredients

  • 1 teaspoon sesame seeds
  • 2 teaspoons avocado oil or olive oil
  • 1 cup red onion, sliced julienne
  • 1 cup red bell pepper, sliced julienne
  • 8 ounces snap peas or snow peas, trimmed and strings removed
  • 1 teaspoon sesame oil
  • sea salt and freshly ground black pepper - as desired

Preparation

  1. Place sesame seeds into a dry skillet over medium heat and toast them until lightly golden and fragrant. Remove from pan and set aside.
  2. Return skillet to medium heat. Add avocado oil or olive oil to skillet and heat until shimmering. Add onion and cook 1- 2 minutes until crisp-tender. Add bell pepper, cook an additional 1 - 2 minutes. Toss in snap peas. Cook until tender but still crisp. Stir in sesame oil. Season with sea salt and freshly ground pepper as desired. Sprinkle with toasted sesame seeds.
